These places respect the past while still building bridges to the future. To be curt about it, the makeup of this area is also altering before our eyes. For example, voracious millennials are demanding a seat at the table and they will complain on Yelp if they don’t get their way. That being said, there is a silver lining. There are suddenly more American and Creole eating places than the humans of the 1930s could ever dream about.

Look, we can’t blame anyone for wanting to check out Red Rocks Amphitheatre. But you are selling yourself short if you don’t find a way to taste the foodie spots here while in Colorado. Many spectacular luncheonettes and canteens in Boulder, Colorado have been operating continuously since before the invention of the automobile. There are also brand new luncheonettes and canteens that have become nearly as trendy among lovely millennials on Instagram.

Food products like steaks and fish are often crafted in the early mornings from scratch, just like it is recommended in the old-fashioned recipe books of Colorado. All Coloradans feel cheer for their gastronomic heritage. It’s a true pleasure to witness.
